Bank Holiday Bake Sale
Since the sun didn't grace us with its presence this weekend, I spent this afternoon slaving away in the kitchen to make two different kinds of cupcakes, as voted for by my colleagues at Racepoint: Cookies & Cream and Lime Meringue, both recipes courtesy of Primrose Bakery.

The Cookies & Cream ones are chocolate cupcakes covered in marshmallow icing and broken Oreo Cookies and the Lime Meringue cupcakes are lime flavoured cupcakes filled with lime marmalade (should have been lime curd, but couldn't find any...) and topped with meringue.
Because this will be the last bake sale I do at Racepoint, I pledge to match however much I raise in the office in the hope that I can meet my £500 target....

Wimbledon Bake Sale
To mark the first day of Wimbledon, I've made some strawberries and cream cupcakes along with some little mini tennis balls. The large cupcakes were based on a Primrose Bakery recipe, filled with strawberry jam and topped with vanilla butter cream. The small ones are the same strawberry cupcakes but topped with lemon flavoured fondant icing.

Cakes for Life meets Race for Life
I pledge to donate half of the funds raised from this bake sale to her fundraising page.
For more pics of this month's cakes, visit my Flikr page. The ones with the breast cancer ribbons are rose flavoured cupcakes with rose flavoured fondant icing; the ones with the rose buds on are vanilla cupcakes with rose flavoured butter icing; the pink ones are vanilla cupcakes with vanilla butter icing. Shout outs go to Primrose Bakery and The Cocoa Box, whose recipes inspired these ones, and to Hal for his handy work with the fondant ribbons and roses. Watch this space for next month's bake sale - Hal's already been practicing for a Wimbledon themed bonanza!

Easter bake sale
I know it's a bit early, but I'm going to be on holiday for Easter and couldn't let the occasion go by without a bake sale. I made these cupcakes with marzipan and cherries, in a nod towards the traditional simnel cake. I got the recipe from BBC Good Food but instead of putting the almond essence in the actual cakes, I added it to the icing along with some yellow food colouring to make it look like egg yolks. I guess if you don't like almonds / marzipan you definitely wouldn't like these, but at least two people have said they're the best cupcakes I've made yet!
